Depending on the volume and type of cooking, commercial kitchen hoods or canopies quickly accumulate oil and grease and require regular cleaning.  It’s no good having clean filters and your gutters overflowing with oil as this increases the likelihood of a fire and shortens the life of the filters.

The hood (or canopy) is located above the cooking appliances (e.g. deep fryers, dishwashers, hot plates etc) and holds the filters.  The hood leads to the fan system located on your roof and this fan draws the air from the kitchen to the outside environment via the duct.

Hoods require regular cleaning and maintenance to comply with health and insurance requirements.
